I've found that all the "good" recordings of the seventh I've encountered so far--Berglund and Davis in particular--have CUTS in them that are very irritating to me because there are little pauses where there should be NONE!

So does anyone know of a really, REALLY good recording of the seventh without separate tracks? (If Vanska doesn't have it, I'm losing all hope in the world...)

Cuts? You mean edits? I can't think of a recording of the Seventh where there are actually bars missing (or even beats). Edits - another matter entirely, a princely can of worms... we can go there if you like....
Or you mean the CD player introduces pauses when the track changes? - If so, Vänskä's is proudly in a single track and it is really, really good!
